So for starters, who doesn't love cookies? I guess there may be a few people out there, but I'm sure not many. My favorite cookies are the ooey-gooey kind that melt in your mouth. I can taste it just thinking about it :-) Nevertheless, if you're trying to eat healthy, cookies probably aren't at the top of your list of foods to eat, at least not all the time, right?
Imagine my surprise when I found a cookie recipe that was actually healthy. I was all over it! These Avocado Banana Cookies are soft, melt in your mouth, quick to make, and so delicious. The best thing about it....its filled with healthy ingredients. If you've got a sweet tooth but want to keep your health goals in mind, this should definitely be a recipe that you try!
1 cup: Cubed Avocado
1/2 tsp: Baking Soda
1 medium: Banana
1/2 cup: Cacao Powder, Raw
1/4 cup: Dark Chocolate Chips (optional)
1 large: Egg
2 tbsp: Honey
Preheat your oven to 350 F.
Blend the banana, avocado and honey in a food processor.
Add in the egg, baking soda, and cacao powder until well blended.
Line baking sheet with parchment paper.
Bake until the cookies are firm (approx. 10 minutes)
