Quick, Delicious, & Healthy “Fried” Chicken

Fried chicken is probably one of my favorite foods. Before I made significant changes to my diet about 7 years ago, this was probably on the menu for me a couple of times per week (maybe more lol). I now try to eliminate fried foods from my diet, but lets face it.... sometimes you just get a craving for some good ol' fried chicken.

This quick, delicious, & healthy "fried" chicken recipe is perfect to satisfy your craving and allows you to do so in a healthier manner. The chicken is baked instead of fried and uses almond flour (one of the healthiest flours) to give you the crunch and crispiness of deep fried chicken.



1 1/2 cup Almond flour

2 tsp Salt

2 tsp Paprika

1 tsp Ground Thyme, dried

1/2 tsp Black pepper

1/4 tsp Cayenne pepper

2lbs Organic chicken thighs, bone-in, skinless

2 tbsp Extra virgin olive oil


Place chicken in a sealable plastic bag. Add olive oil and coat well. Add the almond flour and spices and shake them in the bag with the chicken. Continue shaking until the pieces are coated well.

Preheat oven to 450°F. Prepare a baking sheet with oil or parchment paper. Place chicken on the sheet and bake in the oven for 50 minutes, or longer if needed. Let the chicken stand 5 minutes before serving.
