Chicken Bruschetta

Ok, so let me start off by saying this recipe is just amazing!! If you've ever had Bruschetta (some form of Italian toasted bred with a tomato salsa concoction on top) then you would hopefully agree that it is delicious. However, bread is not always the most waistline friendly food that you can eat. This recipe is perfect because instead of bread it uses a good protein alternative, skinless and boneless chicken breast. The salsa mixture on top is also lower in calories. Combine this with some veggies and you've got yourself a pretty guilt free meal.


If my husband loves this low carb option for dinner then please understand, it HAS to be good. He has been known to shy away from many low fat, low carb, low calorie meals lol. Slowly but surely I have been converting him to eating healthier. I can really test out if something is healthy AND delicious if he approves of it. He raved over this dish the entire night after I made it! So try it out, I hope you all enjoy this recipe just as much as we did.


Chicken Bruschetta

Ingredients (chicken)

4 thin boneless and skinless chicken breast

3 teaspoons Italian seasoning

2 teaspoons minced garlic

salt to taste

1 tablespoon olive oil for skillet


For Topping

4 roma tomatoes, finely chopped

1/4 of a red onion

4 tablespoons shredded fresh basil

2 tablespoons olive oil

salt to taste


Balsamic glaze (you can purchase this already made if in a hurry)

1/2 cup balsamic vinegar

2 teaspoons brown sugar


Method

Season your chicken with the Italian seasoning, garlic and salt. Heat the olive oil in your pan and cook the chicken over medium heat about 6 minutes on each side. Remove from the pain and allow to rest.


While your chicken is cooking you can make your balsamic glaze. Combine your balsamic vinegar and brown sugar in a small saucepan and boil. Once brought to a boil reduce the heat to low and allow it to simmer for about 8 minutes. You want the mixture to have thickened some.


Finely dice tomatoes, red onion, and the basil. Combine together with olive oil. Season the mixture with salt to your taste.


Top each chicken breast with the tomato mixture and drizzle with the balsamic glaze.
